Each pop-up is a poolside party only Slim Aarons could dream of: sessionable sips, cabanas to lounge in, snacks to soak it all up, and DJs matched to meet the vibe from 2–6pm.
It all kicks off on 11 October 2026 in true Sammy style: bubbles, bubbles and more bubbles alongside Maybe Sammy signatures and poolside plates including Queensland scallops with miso brown butter and buttermilk fried chicken.
Cousin Sanchez pops up the following Sunday, 18 October 2026 (because he always finds his way to a good party), bringing tequila cocktails, Primo Margaritas and Mexican-inspired snacks including tempura barramundi tacos, guacamole and tuna ceviche.
Then, on 25 October 2026, we say CHELL-OH! and goodbye with a spritz-laden send-off to close out the month and welcome in Sydney summer. Expect Fancy Melon Sodas, Lemon Drop Martinis and Limoncello Margaritas, best accompanied by Sydney rock oysters, Moreton Bay bug rolls and fries.
A $30 pre-booked ticket gets you a cocktail on arrival, entertainment and guaranteed entry.
